Hey I recently did one project where client wanted no option to be selected like just show option as Choose a color. I was able to achieve that with bit of tweaking in theme coding. I can also tweak that to select a variant by default so customer doesn't have to choose initially. I have also added compulsory note field on cart page and can work on similar in product page too.
