SharePoint coordination and other Office365 setup

We're a small manufacturing company that would like to use Office365 to communicate and display information to our workers. See attached "SharePoint example 2". This is a page I created, I just need it to work! The main thing we'd like to be able to do is use the Need Manufactured list so our assemblers know what to build. The hyperlink under the Instructions column needs to open an excel instruction file on the individual assemblers computer. This file has macros and hyperlinks of its own so it can't open in O365. I'd like this list to have check boxes at each row so once an item is checked off it is removed from the list and a notification is sent to me. Things To Do - I'd like this to just be a general non-manufacturing list of things that need to be completed. I'd like anybody in the company to be able to add things to this list. Again, check a checkbox for each row that once checked the item is removed and a notification is sent to me. Standard Operating Practices & Drawings - just a file sharing area. News - Just area to share News OneDrive - We need OneDrive setup so all the employees computers sync to mine but only for certain folders. Probably some permissions setup so that can't screw up certain files. Permissions - I want the system setup so only I can change the Needs Manufactured, SOP & Drawing Areas, & News. I'm not sure how Sharepoint works but I want it so they're viewing it like a webpage not in the edit view like I see it. I don't want them to be able to edit the actual SharePoint setup. It's important to me that we develop a relationship with person that does this work so we can work together as we want more functionality.
