Modifying OpenCart’s Checkout Page

I am looking for an expert in both the opencart 3 framework and MVC PHP coding. I need to change and tweak, modify a page of the opencart code, for my own needs. And I want you to explain or tutor me how to do this.
This will be an ongoing series of projects, but for this 1st project I need to alter and simplify the checkout page (removing shipping and other unneeded data fields) and the payment page will have 2 new buttons or radio-options to pay the store owner in cash or by check or debit card. We do NOT need to process any debit card, because my friend, the store owner, has a separate machine for that, we just need to enter data into the database of how it was paid. (This page will be used when a local customer comes into my friend’s physical store, and wants to purchase something there. He is not taking any online orders at this site.)

I can easily alter the database myself, and I know the basics of php, but I'm lost in this ‘MVC framework’ way of doing things that Opencart does.
Most of the mods I need are I think in these files:
\catalog\controller\checkout\[login to view URL]
\catalog\view\theme\default\template\checkout\[login to view URL]
