Mysql Errors - Fix Feeds - UTF-8 / Latin Errors

I have a site [url removed, login to view] that is having issues calling foreign characters like åäö from the MySql DB

The problems need to be fixed

- Menu character look correct but linking incorrectly

- News feed needs to be feedburner validated - [url removed, login to view]

- XML Sitemap needs to be correctly coded

I need complete written documentation (instructions) as to how this issue is resolved - for future reference
