Editable PDF - 3 pages approximately

I need to have two PDF document (attached) to become Editable PDF (total of 3 pages). All the fields on the forms need to be editable with numbers or letters with no specific restriction exept for the number of caracters that need to be entered (depending on the space available). Also, these PDF needs to be savable. So I need to be able to fill only the half and then save my progress, close the PDF, open it later and continue if I want to continue or do modification. Also, when there is a field for signature, I want to be able to sign with my finger when using a tablet. So I can create the whole form on the tablet and then sign directly the forms I just filled.
