My field of expertise is array processing and Machine learning. I am sure a good machine learning regression can overcome difficulties of underwater harsh environment. Apart from having worked on ML/ DL computer vision projects, I do have some idea on your current project. We need to understand what hardware is being used for the sonar and what is the receiver array size. typically 16 x 16 array is used and this can detect objects of the size of humans. Also what frequency is the emitter operating at, as we will need to cancel out noise. CNNs can be used in such cases, but will need to see your training data.
