Combine data from a few locations using Kettle

Combine 3 retail stores Sales data to one central location. And then delete the old data from original tables The source Database is based on Advantage Database server Tables [login to view URL] The target tables would keep the same structure and the same database. Some primary keys would have to be changed in order it should stay unique Looking to implement this solution using Pentaho Data Integration with meta data.
