Install linux server

I'm a linux guy myself but I just don't have time, so I need to setup a linux server.
1. Configure RAID1 with 2 nos HDD. Failover from degraded HDD.
2. VPS using XEN and another OS on top of base OS. We want XEN.
3. All steps fully documented (What happens when hhd fails etc) and should be re-created easily in future.
We want a complete fail over system, at any point if anything fails, we should be quickly able to recover. We will keep all tools ready.
The server is currently not setup. The server is in our LAN. We can give access using another system (terminal) or someone can be in the office and talk to you over skype etc for doing manual restart etc.
We prefer Centos 6.
Hardware:
Intel Corei3 processor
Intel motherboard.
2G DDR3 RAM (We will add another soon)
2 1TB HDD (SATA)
Onboard LAN - We will add another LAN (GBPS)
