Hi, I'm Stefano Coratti and I've already worked with Arduino+XBee, what you want to do is easy for me. I configure my XBee using Arduino as a bridge between Xbee and Serial Monitor on the PC also without the XBee shield using directly wires between XBee pins and Arduino pins. As Serial Monitor usually i use TeraTerm on Windows but it's the same for any Serial Monitor. To do this there is no need to write any sketch for Arduino, only a correct setup of XBee you need.
