Roast Chicken with Mango Salad
Roast Chicken really delicious and simple recipe when we fusion with Mango Salad (Mexican) make perfect combination for every occasion.
6-8 Serving
Preparation time: 15 minutes Cook time: 45 minutes
Ingredients
1 whole free-range or corn fed chicken, broken down into 8 pieces
2 Tablespoon soy sauce
1 Tablespoon light brown sugar
3 Tablespoon olive oil
1 Tablespoon Worcestershire sauce
4 shallots, chopped
2 cloves of garlic, minced
Salt and Pepper
Mango Salad
2 Mangos
¼ Red onions
¼ Red pepper
½ Cup Cilantro
2 Tablespoons lemon juice
1 tablespoon peanuts
Salt
Brown Sugar
Direction
First put Chicken on a table and Clean with a towel.
Preheat oven to 425 F
In a large baking dish, combine marinade and toss with chicken. Season well.
Place chicken pieces skin side up and roast for 30 minutes until it begins to brown. Remove and baste with marinade. Flip pieces and bake a remaining 10 minutes or until chicken is cooked.
Mix mangos, onion, red bell pepper, and cilantro leaves together in a bowl.
Whisk lime juice and brown sugar together in a separate bowl until the sugar is dissolved; pour over the mango mixture and toss to coat.
Extras: Top salad with peanuts, and add some chopped finely cilantro and parsleys.
